One-Bowl Fudgy Cocoa Brownies
Dense, fudgy brownies with a shiny crackly top, made in one bowl with cocoa powder, butter and a handful of chocolate chips. No mixer needed.
Chef's note Cool them all the way. Warm fudgy brownies smear when you cut them; cool ones slice clean and dense.

Ingredients
- 10 tbsp unsalted butter 142 g
- 1¼ cups granulated sugar 250 g
- ¾ cup unsweetened cocoa powder 65 g, natural or Dutch-process
- ½ tsp fine salt
- 1 tsp vanilla extract
- 2 large eggs cold
- ½ cup all-purpose flour 60 g
- ½ cup semisweet chocolate chips 85 g
Steps
Heat the oven to 325°F. Line an 8x8-inch metal pan with parchment, leaving an overhang on two sides.
In a large microwave-safe bowl, melt 10 tbsp unsalted butter in short bursts. Whisk in 1¼ cups granulated sugar, ¾ cup unsweetened cocoa powder and ½ tsp fine salt. The mixture will look gritty and glossy. Let it cool about 5 minutes, until warm but not hot.
Whisk in 1 tsp vanilla extract, then 2 large eggs one at a time, beating hard after each until the batter looks thick and shiny and pulls away from the bowl.
Stir in ½ cup all-purpose flour until you can't see it, then beat about 40 strokes more. Fold in ½ cup semisweet chocolate chips and spread the batter into the pan.
Bake 25 to 30 minutes, until a toothpick in the center comes out with moist crumbs but no wet batter.
Cool completely in the pan on a rack, at least 1 hour, before lifting out and cutting into squares.
