Garlic Butter Steak Bites with Green Beans
Seared sirloin cubes tossed in garlic butter with blistered green beans, all in one skillet. A steakhouse-feeling dinner in about 25 minutes.
Chef's note Sirloin is the sweet spot: cheap enough for a Tuesday, tender enough to cook fast. Get the pan hotter than you think.

Ingredients
- 1½ lb sirloin steak cut into 1-inch cubes
- 1 tsp kosher salt divided
- ¾ tsp black pepper
- 2 tbsp neutral oil divided
- 12 oz green beans trimmed
- 3 tbsp water
- 3 tbsp unsalted butter
- 4 cloves garlic minced
- ¼ tsp red pepper flakes
- 1 tbsp Worcestershire sauce
- 2 tbsp flat-leaf parsley chopped
Steps
Pat 1½ lb sirloin steak very dry and toss with ⅔ tsp kosher salt and ¾ tsp black pepper. Dry meat sears; wet meat steams.
Heat 1 tbsp neutral oil in a large skillet over medium-high heat. Add 12 oz green beans and the rest of the salt (⅓ tsp kosher salt) and cook 3 minutes, until blistered in spots. Add 3 tbsp water, cover, and steam 2 to 3 minutes, until crisp-tender. Move to a plate.
Wipe out the pan, add the remaining oil (1 tbsp neutral oil), and heat over high until it shimmers. Add the steak in a single layer (in two batches if your pan is small) and don't touch it for 2 minutes. Turn and sear 1 to 2 minutes more for medium-rare.
Lower the heat to medium. Add 3 tbsp unsalted butter, 4 cloves garlic and ¼ tsp red pepper flakes and toss 30 to 60 seconds, until the garlic smells toasty. Stir in 1 tbsp Worcestershire sauce.
Return the green beans, toss everything in the garlic butter, sprinkle with 2 tbsp flat-leaf parsley, and serve with rice or crusty bread.
